Soup isn’t usually thought of as a hot weather food (unless you’re Lisa Simpson). However, if it’s summer and you’re looking for ice-cold soup options AND gazpacho isn’t your thing, maybe try 3-29: Herbed Cucumber Soup instead.
It’s not technically summer anymore at the time of posting this (October 1), but we’re still hitting 100ºF temps here in California, so I think it counts.
Since there’s about to be quite a few salad recipes coming up, I thought I’d put 2-12: Tips About Salad Dressing out there as well. I tried to think of more salad dressing variations than what they list here, but honestly? Most “traditional” salad dressings do fall into one of the three categories they establish: vinaigrette, cream/mayo-based, and low-calorie. Go ahead–can you think of one that doesn’t?
At the restaurant I worked at a few years ago, we made our own dressings from scratch. And by “we”, I mean “me”–I made all the dressings for the whole restaurant every week and kept everything stocked up, since it was my station (garde manger, or pantry chef) that made the salads. We made a blue cheese, ranch, Caesar, creamy balsamic vinaigrette, and another lighter, more traditional vinaigrette.
Oh boy, yet another pork chops recipe. 7-11: Piquant Pork Chops tries to stand out by boasting a fruity, spicy take on the standard pork-chop-with-pan-sauce entries that have already been covered at length throughout this project.
I think it’s a bit hyperbolic to insist that just adding a “new” spice or sauce to pork chops radically changes it as a dish, but I suppose that for some people it can be a big deal to experience new things outside of the regular old tried-and-true.
The Ground Meat and Sausage category is mainly 2 types of dishes: ground meat patties and ground meat kebabs. 9-29: Ground Meat Kebabs is one of the kebab variety. I made this recipe at the same time as 9-19: Meatballs on Skewers because they called for almost identical ingredients.
Grilling outside is much more satisfying than using a grill pan in my apartment, but I currently don’t have a lot of space for grilling.
Editor’s note: Putting on my ex-history teacher hat for a second–note that Simply Delicious claims this dish is from the vineyards of Yugoslavia, which hasn’t been a country since the late 80s/early 90s, around the time the Soviet Union collapsed. These remind me a lot of lule kabobs, which were one of my favorites when we lived in a heavily-Armenian area in Los Angeles (the apartment with the blue tiles and yellow walls from the beginning of this project). These are NOWHERE near as good as those ones, but I suppose they could pass in a pinch.
Gyro is probably my favorite preparation method of ground meat, so when I saw this recipe, I got very excited. This recipe, 9-19: Meatballs on Skewers is basically the same recipe as gyro, just served differently. However, I wish I had just bought a container of tzatziki at the store instead of making the yogurt sauce.
The rabbit handle piece on the end of the skewer in the example photo is simply incredible. I’ve never seen a set of skewers quite like that. It looks like the other skewers have other animal handles, I think I see a cat and a chicken on the other skewers that are slightly obscured by the meatballs. The serving dish is very neat, I’d like to add one to my collection.
17-35: Healthy Bread with Vegetables was yet another attempt to make bread that went somewhat awry. This recipe was quite an experiment with quite unusual results. 🍞
This bread was definitely moist and colorful. I’ve had carrot cake, but I’ve never had shredded carrot in my bread. I substituted the beet with zucchini because the only Beets I enjoy are the band from Doug.
As I said in a previous Cooking School installment (19-13: Cooking with Cheese), cheese is a really big part of Simply Delicious, and other dairy products factor in heavily as well. Today we see a lot more alternatives to traditional dairy (coconut milk, tofu, etc.) which is probably good given environmental and ethical concerns related to commercial dairy & meat production. However, it’s important to understand the original ingredient if we hope to find workable alternatives.
Not much more to add to what they’ve written here, but after the jump we’ll take a look at some common culinary dairy ingredients (check out 19-13: Cooking with Cheese for some recipes using specific types of cheeses) and I’ll link you to some recipes that use those ingredients.
While I’m not a huge fan of bananas themselves, I’m surprisingly a fan of banana bread. 🍌🍞 It’s always good for breakfast or as a snack. This particular recipe for it, 17-17: Banana Bread with Pecans uses honey to sweeten it, which is a nice alternative to using processed sugar.
