17-23: Mocha Éclairs

As part of my Mother’s Day brunch this year (MD2017), I wanted to push my limits by attempting some of the hardest pastry recipes in the book. I tested my skills not only with 17-44: Homemade Danish Pastries, but with this recipe as well, 17-23: Mocha Éclairs.  My mom always referred to éclairs as something that challenged her when she was learning to cook and bake, and that a well-executed one was something that really impressed her. With that in mind, I knew this recipe was a must-do.

I may have to make a few adjustments to Simply Delicious‘ version of the recipe–first of all, there’s no chocolate listed anywhere in this recipe, and it’s advertised as “mocha”, which is coffee AND chocolate. We may have to do something about this “slicing the tops off” idea as well.

6-2: Fiery Chicken Casserole

The whole time I was making 6-2: Fiery Chicken Casserole, I had this image in my head because I thought my sauce came out wrong. My sauce was light colored and the chicken in the photo shows a crispy, golden skin. If you look hard at the bowl in the upper left corner, you can see the white sauce that the authors described.

My version of the casserole came out a lot differently than the image shown on the card and didn’t taste very “fiery”. This dish would need a lot more heat to be considered “fiery”. ?

15-51: Frozen Strawberry Yogurt: I really liked this cold concoction. I have never attempted a frozen desert before this. I’m glad to say this recipe was a great success. ?

This card describes the flavor like a certain presidential candidate I am loathe to quote, except it’s so quotable…it’s fantastic. ?

These are essentially homemade oven fries, and they’re super easy to do. So easy, in fact, that I used to use these as one of my recipes for when I taught elementary & middle school kids to cook in an after-school program a few years ago. If a kindergartener can do it, you can too.
