Minestrone soup has a few specific memories for me: I remember there always being cans of it in our pantry when I was a kid, and all of my favorite Italian restaurants growing up still have it on the menu. My dad was a big minestrone fan–both of those memories are tied pretty closely to him.
3-6: Minestrone comes from the new book, and it’s not surprising that Simply Delicious had a recipe for it–they tend to have their own versions of most of the “classics”.
I’m not sure I’d suggest serving this in what look like miniature barrels in the picture above (imagine trying to clean those). However, the colder weather is coming soon, and this recipe is a good (and cheap) way to meal-prep, eat your veggies, and stay warm all at the same time.
Looking for a smaller Thanksgiving option this year than the traditional 6-29: Stuffed Turkey? Here’s part of what I made for last year’s meal–6-42: Turkey Pot Roast. If you’re cooking for less people this year (or any year) and still want something Thanksgiving-ish, this might be a good option.
I didn’t want to make a full turkey for only two meat eaters (me not being one of those two), so I combined this recipe along with some additional leg and thigh pieces into enough turkey to complete the holiday without having to make more than we needed.
This is also MUCH easier to do than a full turkey, especially if you’ve never attempted one of those before and don’t want 2020 to be your first run at it. 6-9: Orange-Glazed Turkey Breast is another “smaller” turkey option if you’re just looking for a taste of turkey instead of a glut of it.
Salads are usually a good choice when it’s hot out, and since we’re currently in the middle of summer (here in the U.S.), 2-3: Salad Niçoise (pronounced nee-swah) might be a good choice for an upcoming meal. Plus, it primarily uses readily-available canned/jarred ingredients, which can be helpful for both budgets and pandemic shopping.
We’re getting to the some of the last recipes I have for some of these chapters, and 7-33: Country Dinner is one of the few remaining entries from the Pork chapter of Simply Delicious. Honestly, this recipe as it exists is not much more than mashed potatoes with bacon and onions. That doesn’t sound bad per se, but I don’t know if it constitutes “dinner”.
Google only gave me a few results for similarrecipes, but I’m pretty sure this isn’t too far off from the mashed potato bowls you can get at like KFC. If anything, the KFC ones come with more stuff in them.
There are few things in this world as good as potatoes and vegetables covered in cheesy breadcrumbs. It’s a popular side dish that you’ve seen many variations of. I really enjoyed 4-36: Golden Potato Medley and the plating that Simply Delicious shows below looks so much better than how my dish came out. I go more for utility than aesthetics when I’m cooking, but it’s also true that you eat with your eyes before your stomach. 👀
This dish is the perfect side dish, but it is hearty enough to be eaten as an entree. It doesn’t look like much, but is perfect with hot sauce.
Not every Simply Delicious recipe is a home run. With 9-39: Zesty Meat Casserole, perhaps unsuccessfully, tries to break the mold. By not forming the beef into a patty, meatball, or kebab, this casserole tries to do something different. To cook this recipe, I had to prepare a parsnip, something I’m not accustomed to. I made this dish before a trip out of town and brought it with me to have something homemade to eat.
I cut my vegetables in a manner similar to the photograph, but my substitution of milk for half-and-half made the sauce come out runny.
Any excuse to pull out the electric griddle is alright with me! After all of the meatball-style recipes in the Ground Meat and Sausage section, I was ready for a patty-style recipe again and 9-1: Spicy Beef Patties did not disappoint. I’ve never thought to put pickled beets into a burger before, but after trying this recipe, I would consider it again.
I love the little skinned potatoes they served alongside the patties in the example photo. I haven’t quite learned the technique to cook those yet. Their side salad is very photogenic, but not very filling. 3 tomato slices and 1 leaf of lettuce.
Chicken soup is always good on a day when you are feeling sick. I made 3-9: Mexican Chicken Soup on a really hot day, basically the worst type of day to make chicken soup. I was able to freeze and store all of this soup for future meals. Later on in the week that I made this soup, I caught a nasty cold and having a stockpile of chicken soup really helped me feel better.
The spice mixture is the only part of this soup that is remotely Mexican.
