8-35: Flambéed Steak Diane

Today I have something “old-school” for you–8-35: Flambéed Steak Diane. This is a dish that’s been around for a while and is considered “retro” today. It is similar to steak au poivre and is another of those “quick pan-fried steak” recipes that use butter and some sort of umami as a sauce.

This is the last entry from the batch of beef-but-not-beef recipes I made to clean out the freezer–I’ve had those posts sitting in my queue for quite a while. I had to space them out because they’re all SO similar. 19-6: Fresh Herbs

Since it’s summer, I didn’t want to miss the opportunity to share my summer garden with you, courtesy of 19-6: Fresh Herbs. This one came from the new book, and is the prequel (of sorts) to 19-7: Fresh and Dried Herbs. I had lamented not being able to easily find fresh tarragon back when I wrote that one–well, now I grow it myself in my own backyard.

Growing my own herbs in my own garden for use in cooking was one of the top reasons I wanted to buy my own place, and the garden situation outside was one of my main factors when selecting a house (back when you could have preferences about things like that and didn’t just have to overpay for whatever was available).

I use my homegrown herbs for cooking all year round, and it’s quite the pleasure to be able to use just the amount needed fresh from my own backyard rather than buy overpriced herbs at the grocery store and then watch them wilt and die in my fridge.

11-22: Scallops with Tomatoes

Simply Delicious says that now (winter) is the time for scallops, so here’s 11-22: Scallops with Tomatoes for you. It’s very similar to one of my FAVORITE recipes from this book, 11-12: Creamy Sautéed Shrimp (otherwise known in my family as “Shrimp Something”).

Seafood + butter + curry + tomatoes + cream is pretty much always going to be a win. With rice, 10/10?

3-29: Herbed Cucumber Soup

Soup isn’t usually thought of as a hot weather food (unless you’re Lisa Simpson). However, if it’s summer and you’re looking for ice-cold soup options AND gazpacho isn’t your thing, maybe try 3-29: Herbed Cucumber Soup instead.

It’s not technically summer anymore at the time of posting this (October 1), but we’re still hitting 100ºF temps here in California, so I think it counts.

Summer 2020 has been quite the disappointment so far, and still being stuck at home is tough. If you’re looking for something to lift your spirits, 2-21: Shrimp Salad probably isn’t going to do it. However, if you close your eyes while you’re eating it, maybe you can pretend you’re on the beach instead of your couch.

This salad features not one but TWO cream-based dressings, so you know it’s fancy. I recently covered 2-5: Caribbean Seafood Salad which also features a shrimp-based salad. However, that one includes apples, bananas, and asparagus, so this one might be a safer choice.

5-10: Scrambled Eggs with Tomatoes

Looking for a quick, healthy breakfast option from Simply Delicious? 5-10: Scrambled Eggs with Tomatoes is from the 1980s, but actually holds up really well 30+ years later. Consider this the predecessor to avocado toast.

This version uses cottage cheese in the scrambled eggs (instead of milk, I assume). If you’re looking to cut calories (and fat) even further, skip the milk and butter altogether–according to the late Anthony Bourdain, you don’t need either for good scrambled eggs.

19-7: Fresh and Dried Herbs has been a recipe-in-the-making for a few months. I mention frequently that I often write these entries months after I complete the actual recipe, but this one actually took me that long TO complete.

Usually, these Cooking School cards don’t have too much in the way of actual recipes–often times it’s more like the card above, more recommendation than actual recipe. 9-45: Country-Style Sausage Medley

“Country-Style” carries multiple definitions and connotations. The author of 9-45: Country-Style Sausage Medley surmised that a dish containing this many varieties of vegetables must be “country-style”. Chicken sausage is a low calorie option, however, it lacks the punch of flavor a good beef sausage can provide.

This dish contains a lot of vegetables already. If I had to add any other vegetables, I might substitute the cabbage for Brussels sprouts.

1-6: Surprise Sandwich Loaf

Trying to put some new posts out there for you–here’s 1-6: Surprise Sandwich Loaf, which was made with a loaf baked from the dough I used for 20-12: Basic Rolls. I made this to break up into portions and take to work with me for lunch one week. It was delicious when first made, but with most things lost its appeal as the week went on.

I love toasted sandwiches. One of my high school jobs was at a Quizno’s, at which I came up with personal sandwich masterpieces which would be impossible to recreate had I been nothing but a customer. However, while I appreciate the efficiency of an entire toasted sandwich loaf, this particular execution leaves something to be desired.

1-37: Savory Cheese Appetizers

We can pretend that 1-37: Savory Cheese Appetizers is something fancy and unique, but it’s really just a blue cheese spread on squares of white bread. If you like blue cheese, I suppose this could be an exciting concept–the 1980s were big on both blue cheese and dips (which this recipe can double as).

Simply Delicious has a lot of blue cheese-related recipes–a few I covered just recently include 5-20: Golden Cheese Tartlettes and 1-20: Prosciutto Appetizers. After making all three of these essentially back-to-back, I’m a little burned out on blue cheese for a while.
