3-33: Broccoli Wild Rice Soup

3-33: Broccoli Wild Rice Soup

This is not my first time to the broccoli soup rodeo, so 3-33: Broccoli Wild Rice Soup should be a snap. 🏇🏼 A while back, I made 3-21: Broccoli-Celery Soup and broccoli is still in season at the time I  am writing this post.

Cold isn’t my favorite temperature when eating soup, but with so much sour cream, the soup may separate during reheating. ❄

4-18: French Vegetable Casserole

4-18: French Vegetable Casserole

Everything I needed to learn about making 4-18: French Vegetable Casserole was told to me by Remy the animated rat, star of Ratatouille. I know…the editors of Simply Delicious call this dish “French Vegetable Casserole” to make the name more palatable for Middle America. 🇫🇷

The card mentions that the dish is referred to as “ratatouille” in its area of origin.

Editor’s note: I did the underlining you see above when I realized this recipe was “ratatouille”I’ve made this recipe before, a year or two prior to embarking on this project. I even watched Ratatouille on my laptop while I made it. 🐀

3-21: Broccoli-Celery Soup

3-21: Broccoli-Celery Soup

Jamie made this recipe, 3-21: Broccoli-Celery Soup, for me before on a mild Christmas Eve. 🎅🏽 We were living in Glendale at the time, it doesn’t exactly get cold there. ❄

(Editor’s noteI didn’t make this on Christmas Eve–my mom did. I don’t know which Christmas Eve, but that’s definitely her writing. I did however, make this when we lived in Glendale, CAand he’s right about that–it doesn’t get that cold there.)

I really enjoyed the soup the first time around, so I took my own shot at cooking this recipe.

1-13: Crusty Toast with Mushrooms

1-13: Crusty Toast with Mushrooms

Well folks, this is the 100th cooked recipe I’ve made for this project, which is just shy of 2 years old at this point. I chose 1-13: Crusty Toast with Mushrooms to be the 100th recipe for a reason–it was one of two recipes (along with 1-33: Artichoke & Roasted Pepper Dip) that inspired me to do this project in the first place.

1-13 Crusty Toast with Mushrooms

I made this for a birthday party I’ve mentioned before along with 1-8: Delicious Cocktail Snacks and 16-37: Double Decadent Brownie Torte. It’s a great appetizer and a delicious snack.

1-33: Artichoke & Roasted Pepper Dip

1-33: Artichoke & Roasted Pepper Dip

Around the time I started this project (almost 2 years ago at this point), I was distracting myself from real-world stresses by throwing myself into something that always made me happy–cooking. I would make dishes from these and other books and send them to work with my husband or bring them with me to share. 1-33: Artichoke & Roasted Pepper Dip was one of those dishes–in fact, one of the two that inspired me to make the project a reality.

1-33 Artichoke and Roasted Pepper Dip

I made it originally for my husband’s work (they loved it) and I made it this time for a get-together I attended (also loved it). It’s SUPER easy and a real crowd pleaser. I mentioned that this was one of two recipes that inspired this project–the other was 1-13: Crusty Toast with Mushrooms.

17-31: Chocolate Oatmeal Cookies

17-31: Chocolate Oatmeal Cookies

The only chocolate-containing component in my holiday baked goods assortment, 17-31: Chocolate Oatmeal Cookies are honestly pretty good any time of year. So if you’re reading this at some other time of year besides Christmas Eve, don’t feel like you can’t make these.

17-31 Chocolate Oatmeal Cookies
I found a way to mess these up as well (seems like this year I had a hard time with some things that should have been really easy), but I’ve made them before previously to this, and both times (then and now) they’re still definitely very edible and good.

3-13: Velvety Carrot Soup

3-13: Velvety Carrot Soup

I think one of my favorite parts of old cookbooks is the adjectives they use to describe their dishes. I like to imagine a team of writers/cookbook jockeys staying late into the night, trying to dream up the perfect word to engage some adventurous cook into what would be an otherwise mundane-sounding recipe. How do you make carrot soup exciting?

That’s where “velvety” comes in. I present–3-13: Velvety Carrot Soup.

3-13 Velvety Carrot Soup

Oh, Simply Delicious. I admire you for trying to get me so excited about your carrot soup, that you put smiley face dollops of sour cream on your camera bowls.

When you have a LOT of carrots to get rid of and you’re looking for something velvetySimply Delicious has you covered.

3-1: Sweet Potato Vichyssoise

3-1: Sweet Potato Vichyssoise

Soup is technically easy to make, but can still quickly go wrong. Our CSA box came with 2 lbs. of white sweet potatoes this week, and it was time for something else besides sweet potato fries. The trusty interwebs told me that white sweet potatoes were pretty similar to regular ones, so I thought I’d give 3-1: Sweet Potato Vichyssoise a whirl.

3-1 Sweet Potato Vichyssoise

Vichyssoise is originally a French-American creation. This version is definitely more of an autumn/Thanksgiving-type of flavor, but it was still easy to make and pretty good. Obviously the recipe card depicts the use of an orange sweet potato, but white sweet potatoes work pretty well also.

Soup’s on!

5-1: Mushroom and Cheese Pie

5-1: Mushroom and Cheese Pie

5-1: Mushroom and Cheese Pie…didn’t go as well as hoped. Following directions is important, friends. Let’s dive in–we’re still in Book 1, Group 1 (Appetizers & Starters).

5-1 Mushroom and Cheese Pie

We got a lot of mushrooms in our CSA box this round, and I used the Maitake mushrooms for another recipe from this book, but forgot to photograph it. And as the internet says, “pics or it didn’t happen”. So, I decided to use the White Beech mushrooms for this recipe.

First mistake. Of several.

2-34: Avocado-Parmesan Salad

2-34: Avocado-Parmesan Salad

We start our journey in Book 1, Group 1: Appetizers & Starters with 2-34: Avocado-Parmesan Salad. Got that? It’s further broken down into subgroups, depending on different classifications. I see now where I get my classification aptitude.

2-34 Avocado-Parmesan Salad

We start here due to yesterday’s CSA box delivery brimming with already-ripe avocados (a rarity). As avocados are a fickle beast, it was imperative to consume them in the near future.
