Hi there, back again with another “Asian” dish for you today. It’s interesting that Simply Delicious didn’t choose to name 8-45: Korean Sauteed Beef “Korean Beef Stir-Fry” instead (maybe because 8-25: Stir-Fried Beef is already in the book) —stir-fries seemed like they were all the rage in the late 20th century as a “healthy” dinner option. I suppose they still are popular today, but they don’t seem as “unusual” to make for dinner at home as they did back then.
I remember when my mom would bust out her wok every so often for a stir-fry back in the 1990s–it always seemed so much more interesting than when we would just cook in a regular pan on the stove. The blurb above suggests to serve it with noodles, but you can also do rice (or veggies, if you’re one of those actually healthy people–I clearly am not).
Another day, another Simply Delicious “quick” dinner recipe featuring some sort of creamy sauce with mustard in it. This particular version is 8-6: Quickly Sautéed Beef and Peppers–I bet you can figure out the basic gist of this recipe just from the title.
They REALLY need you to know how quick this dish is–it’s not only in the title, it’s also in the description. Pepper steak is not a new concept, and is not too far off from this recipe in terms of ingredients and prep. Whip up some rice to serve it with, and you’ve got yourself a QUICK and easy dish.
It’s been a while since I’ve covered anything breakfast-related, so let’s dig into 4-5: Potatoes O’Brien to change that. I’ve heard of Potatoes O’Brien before (and you may have as well)–you can even buy them frozen from the grocery store. Here’s how to make them at home on your own, since takeout/delivery/eating in can be a bit hit-or-miss these days.
I suppose eggs might fall under the category of meat or poultry, but it seems to be the go-to accompaniment for this dish. As you can see from the header image, I served mine with a homemade breakfast sandwich which also made a good option. Who needs those bigbreakfastguys anyway?
Stuffed peppers were not a big thing in my household growing up–neither my mom or I are big fans of bell peppers (sorry dad). However, that may not be the case for you–9-11: Stuffed Peppers might be something you’re more than familiar with. Since this was a “new book” recipe, I didn’t even know Simply Delicious had a stuffed peppers recipe…until now.
I had written a while ago (in 9-23: Fruity Sausage Kebabs) that I had at that point covered all the Chapter 09 recipes that I possess…and then I found the new book and had a few more to cover. Well, I’ve reached that point again–this is (again) the last recipe I have for this chapter. Unless more recipes turn up somewhere (don’t send them to me, I’m not trying to be the online library for this book), this is it for Ground Meat and Sausage.
Fish kebabs are probably not high on your Christmas dinner idea list (unless you’re reading from the Southern Hemisphere), but that doesn’t mean that you still can’t file 11-24: Salmon and Halibut Kebabs away for when it warms up a bit. Or if you’re not crazy like us and still grilling outdoors in late December, you can do this one inside on the broiler as well.
I know, I probably can’t convince you to eat grilled fish in the middle of winter. But like I said–save this one for spring/summer when it warms up. It’s a perfect light meal for a warm night where you don’t want to heat up the kitchen.
We’ve just passed the 7-year anniversary of starting this project (April 16)…and I’m still nowhere near done. This is going to take me the rest of my life at this rate, I think.
A dish that WON’T take you the rest of your life to complete (notice my flawless segue there) is 8-30: Hungarian Goulash. It’s supposedly a dish for cold days, which are quickly becoming few and far between here in California now that it’s almost May. However, if you’ve still got a touch of cold where you are (or maybe your hemisphere is heading towards winter instead of summer), this might be a good option.
Pork is probably the most common version of sweet-and-sour that you see in Chinese restaurants–there’s even a vegan version of it you can buy in most stores. In case you’re looking for something more refined (but maybe not as easy or meatless), here’s Serious Eats’ take on it.
If you haven’t figured it out by now, there’s a bit of a lag between when I make these recipes and when I actually post about them. It helps me to reread the recipe to figure out what I’m doing in a lot of these photos. While rereading the recipe for 12-28: Tri-Color Risotto, I realized I didn’t even make it right.
That’s my first explanation for what happened here. My second is that I don’t like cooking rice in a pan–I’m spoiled by rice cookers.
Cajun and Creole cooking are not something I’ve had a ton of experience with, so 7-21: Jambalaya is somewhat unfamiliar territory. I didn’t grow up eating a lot of New Orleans cuisine, other than my mother’s ill-fated attempt at making gumbo once.
It’s not a difficult recipe (quite the opposite, actually), but I don’t feel like I have a solid understanding of the difference between what makes it good and what makes it great. That’s something that comes with experience, both as a taster and as a creator.
I couldn’t have even told you that there are two types of jambalaya, Creole and Cajun. According to the all-knowing Wikipedia, the difference between the two is the absence or presence of tomatoes. Simply Delicious identifies this version as Creole, which is correct–that’s the version that has the tomatoes in it, which this one does. 🎺🍅
“It smells like weird Mexican food in here,” Jamie said as she walked in the door. She wasn’t wrong. The example image sets a rustic farm tone with the watering can, basket of red peppers, and parmesan cheese in the background. The watering can even has onions painted on it. Awesome!
When I saw that it will need reheating before eating, I decided to make this dish in a large rectangle Pyrex. I made this recipe at half size to accommodate the baking dish. I only used two onions because Simply Delicious bases the number of onions on the smaller onions that were available when these recipes were written. Two was more than enough.
