🐰 The Easter Bunny has come early this year and he’s brought 5-13: Italian Easter Pie! I prefer the Cadbury Bunny to the Easter Bunny, but I’ll eat this pie any day.

2-14: Quick and Easy Tomato Salad is a Simply Delicious recipe that is aptly named for once! This tomato salad was quick and easy, just as advertised. 🍅
This salad made a quick dinner on a hot summer night where I didn’t want to heat up the oven. 🔥
17-35: Healthy Bread with Vegetables was yet another attempt to make bread that went somewhat awry. This recipe was quite an experiment with quite unusual results. 🍞
This bread was definitely moist and colorful. I’ve had carrot cake, but I’ve never had shredded carrot in my bread. I substituted the beet with zucchini because the only Beets I enjoy are the band from Doug.
4-7: Mixed Vegetable Bake is yet another boring vegetable dish. 🍆 🌶 🍠 There wasn’t an emoji for the vegetables used in this dish, but it was such a bland dish that even the text needs a little excitement with some added emojis! 😉
This onion is about the most flavorful part of this combination behind the cheese. The vegetables add a lot of color, but not a lot of flavor.
An old proverb states, “If you’re going to make an omelette, you’re going to have to break a few eggs.” 5-9: Swiss Cheese and Crouton Omelette is another Simply Delicious recipe where I had a reading comprehension fail and had to get creative to fix it. I didn’t notice that I was making up two individual omelettes and accidentally tried to make a giant omelette all at once which didn’t go well. 🍳
As the card states, it would be great for our next brunch. We had this dish on a night where we had breakfast for dinner. I made bacon to make it feel more breakfast-y. 🌇
It’s hard to think of things to write about something you cooked awhile ago–a moment of honesty while I get my gears turning here. 13-2: Onion Tart is a great vegetarian (with a modification or two) option that satisfies everyone for any meal of the day. It’s not super exciting (which explains my inability to think of anything particularly interesting to say about it), but it’s definitely a pretty good fallback option if you’re in need of an easy, crowd-pleasing, inoffensive, yet impressive recipe.
Simply Delicious notes that this recipe is French and that this version comes from the Alsace region of the country. I found a fewothertakesonthatversion scattered around the Internet, but give or take some bacon and Gruyère cheese, they’re all relatively similar to this one. 🍷
Baking is still new to me, so I took this recipe, 17-26: Breakfast Crescents as another chance to experiment with yeast again. These crescents taste very much like a loaf of bread, just in crescent roll form.
This is just a simple bread recipe where you roll the dough into crescents.
Here’s some easy breakfast or snack rolls to make that can get super addictive. 17-33: Coconut Coffee Rolls don’t necessarily need to be consumed with coffee if that’s not your bag, but they do pair nicely for a morning pick-me-up. 🌴☕️
I’ve made coconut rolls before, but they were somewhat different (17-67: Coconut Crescents) and I used those as part of my 2015 holiday gifts. Most of these rolls didn’t even make it out of the house–usually I try to distribute the majority of the baked good products of this project to my friends and family to avoid eating all of it ourselves.
Simply Delicious can give a dish a title that seems a bit of a stretch at times and this is definitely a prime case of this phenomenon: 12-16 Risotto with Pastrami.

The card even announces, “(t)his recipe for risotto differs from the traditional one.” I’ve never seen a dish like this, but the flavor profile was the same as a fancy omelette, just deconstructed before that was trendy.
I realize it’s now June, but here’s a recipe I made for Mother’s Day this year, at the request of my very own mother. What can I say…it takes a while to actually sit down and write these things sometimes. We were doing brunch at their house this year, and she wanted us to bring cinnamon rolls, so I solved two problems at once by making 17-4: Cinnamon Rolls.
This particular recipe doesn’t include an icing/glaze with it, but if you want one (as I knew my mom would), I used this recipe from food.com and it works just fine. Let’s be honest–the ones in their picture are probably NOT what you pictured when you thought of cinnamon rolls. Whether you’re thinking of their picture or mine, this recipe (with a few tweaks) will probably suit your needs.
