15-19: Layered Fruit Salad

It’s a few weeks after Mother’s Day at this point, but better late than never. This year for Mother’s Day, I took a few Simply Delicious recipes and decided to make a brunch menu out of them for my mom. We usually do lox and bagels at home for our holiday brunch celebrations, but this year I wanted the full Mother’s Day buffet experience–but still at home. It’s not brunch without fruit salad, so the first entry for this grand event (MD2017) is 15-19: Layered Fruit Salad.

But wait a minute, you say! This is from the Cold Desserts category? How can it be for brunch?

It’s fancy fruit salad–I think it’ll be okay either as a dessert or a brunch side dish. Plus, I need to burn off some of these dessert recipes–so many of them require fresh fruit and summer is the best time for that.

9-27: West Indian Meat Casserole

If you had told me as a kid that I would eat meat and bananas together in a dish, I would have called you, “crazy”! Some cuckoo chef over at Simply Delicious is playing a weird joke on people with 9-27: West Indian Meat Casserole, but this dish is rated mostly edible. Jamie wouldn’t touch it with a ten foot pole. 🍌

I don’t really see how this dish is festive. It also isn’t very attractive, at least, not in the way I prepared it.

14-25: Crêpes with Fruity Filling

14-25: Crêpes with Fruity Filling is only the second recipe I’ve covered for Group 14: Hot Desserts, but it’s the third total crêpe recipe that I’ve tried from the book (the others being 5-22: Crêpes with Chicken and 5-24: Meat-Filled Crêpes) so far. Those two previous recipes were savory–this one is sweet.

14-25 Crepes with Fruity FillingThis recipe is suggested for dessert, but I think you could have it for breakfast (or even lunch) if you wanted. If you don’t like the fruit they suggest, you can substitute your own or whatever is local/in season. 🍒🍍🍓

17-17: Banana Bread with Pecans

Banana bread is always good for breakfast or as a snack. This particular recipe for it, 17-17: Banana Bread with Pecans uses honey to sweeten it, which is a nice alternative to using processed sugar.

17-17 Banana Bread with PecansSimply Delicious gives you a nice blurb here on bananas–for a more in-depth look, check out 19-5: Bananas, part of the Cooking School series featured at the end of the cookbook.

17-51: Three Palms Quick Bread

17-51: Three Palms Quick Bread tastes delicious, but took forever to end up making, since I never seemed to have bananas, dates, and coconut all at the same time. 🌴

If you like banana bread, this is a really good take on that. Plus, 3 palms instead of 1! Such a deal! 👍

11-16: Indian Fried Fish

Another bit of real life distractions, but I refuse to let this die. Back to it, with an interesting dish: 11-16: Indian Fried Fish. 🐟

11-16 Indian Fried Fish
Um, okay. “Indian” is being used liberally here, as far as I can tell. It was an okay dish, but didn’t exactly conjure up images of India. This seems more like West Indies/Caribbean “Indian” than India “Indian”.
