16-54: Lemony Cottage Cheese Pie

Whenever I think of lemons, I can’t help but think of Lemongrab from Adventure Time, my favorite, lemon-insipred, animated character. From my research, there are two other major characters who are lemon-themed, Lemon Meringue from “doll commercial hidden in a cartoon” Strawberry Short Cake and Honey Lemon, one of the main characters from Big Hero 6, a 3D animated feature film released by Disney in 2014 . I haven’t had a chance to check this movie out yet, but if it ever pops up on Netflix, I’d watch it. Now that my rant about cartoon characters is complete, enjoy this entry about 16-54: Lemony Cottage Cheese Pie, a really weird lemony pie. ?

Serving this pie on top of a tapestry featuring a creepy little girl must somehow enhance the flavor of this otherwise weird lemony pie. The background tapestry is probably the most interesting and tasteful part of the entire photograph.

17-25: Almond Rolls

17-25: Almond Rolls are kind of a bonus holiday baking (XMAS 16) post for me–only one person received the bulk of these, as they made up part of a week-long Secret Santa gift-giving event that my work puts on. ?? My giftee for Secret Santa not only got these, but a batch of 17-9: Brownies with toasted hazelnuts both in the batter and on top, as well as a batch of my family’s chocolate chip cookie recipe with red & green M&Ms swapped in for semisweet bits. ??

These almond rolls are similar to cinnamon rolls/buns, and like the recipe that Simply Delicious provides for cinnamon rolls, these ones lack a glaze/icing as well. However, given the sweetness of the filling and the fact that these are a gift for someone, I’ll forgo adding icing on my own this time. ?

9-27: West Indian Meat Casserole

If you had told me as a kid that I would eat meat and bananas together in a dish, I would have called you, “crazy”! Some cuckoo chef over at Simply Delicious is playing a weird joke on people with 9-27: West Indian Meat Casserole, but this dish is rated mostly edible. Jamie wouldn’t touch it with a ten foot pole. ?

I don’t really see how this dish is festive. It also isn’t very attractive, at least, not in the way I prepared it.

13-12: Eggplant-Rice Casserole

13-12: Eggplant-Rice Casserole is a heavier preparation of eggplant than my other eggplant recipe, 13-16: Arabian Moussaka, this rice and eggplant dish is two, two, two dishes in one. I’ll show myself out for that dumb, old reference… ?

There were lots of colors in this dish: purple ?, orange, green, yellow, white, and a few shades of beige.

12-18: Mushroom Risotto

12-18: Mushroom Risotto is another recipe with a loose definition of risotto. This one didn’t even ask you to cook the rice in wine, just broth. I already had some mushroom broth infused white rice on hand, but the recipe called for brown rice.

This ended up being a dish that tastes very similar to the 12-41: Spaghetti with Green Sauce recipe that I cooked recently. Mushrooms and basil give this dish an earthy flavor. ?

7-14: Easy-to-Make Pork Casserole

I think Simply Delicious was aimed at the working-mom demographic primarily–a lot of the recipes focus on easy weeknight meals just as much as the fancy dinner party options. 7-14: Easy-to-Make Pork Casserole is a casserole in the sense of a casserole being a bunch of random stuff thrown together in a vessel and then heated.

Casseroles are typically defined as the traditional green bean or tuna types that we (by that I mean mostly Americans) associate with that word. This dish is a loose mixing of vegetables and pork cubes, and is honestly much more reminiscent of 7-55: Sunday Pork Stew than of “casserole”. My mom seemed to like it though, when she made it back in April of 1992.

12-5: Greek Rice

Here’s a healthier option–some of the last few have been more on the indulgent side. Don’t get me wrong–there’s plenty more indulgence to come. 12-5: Greek Rice is a nice vegetarian option for a party, picnic, or just an everyday meal. I’m not entirely sure what makes it “Greek”, but we’ll go with it.

What else can I say–it’s just not that exciting. The final dish actually ends up similar to what Americans call Spanish rice, but with more veggies and a somewhat tangy flavor. If that interests you, read on.

7-55: Sunday Pork Stew

7-55: Sunday Pork Stew was part of a recent 3-recipes-at-1-time attempt, which also included 4-2: Green Beans with Hazelnut Butter and 4-4: Scalloped Parsley Potatoes.

I had originally intended to make a different pork recipe, but when faced with an unexpected ingredient shortage (someone used my mushrooms), I rolled with it and dug out another pork recipe for which I had ingredients on hand. This would have been better with pasta or rice, as suggested on the card, but dinner is dinner when you’re hungry.
