1-10: Seafood Cocktail Louisiana

I’m counting 1-10: Seafood Cocktail Louisiana as the fourth dish I made of this year’s 7-recipe Thanksgiving cooking marathon (TGV 2016) , but its components actually spanned a few days (and a few cooks). This was one of three appetizers I made for my Thanksgiving dinner–the others being a crudité & hummus platter and 1-5: Pigs in a Blanket.

My mom was always big on the idea of “shrimp cocktail” as being necessary for Thanksgiving dinner appetizers (it was always part of her family’s holiday dinner when she was growing up), so in order to honor that idea, I chose this recipe.

As I mentioned above, I’m counting this as the fourth dish I made–it spanned Wed. 11/23 and Thu. 11/24 as different components had varying levels of make-in-advance-ability. My sous chef made the dressing and prepped shrimp the first night, while I assembled the dish itself right before serving the next day.

I made another “New Orleans” recipe at the same time as this one–you can go back and read 12-29: New Orleans Beans and Pasta for what is essentially a pasta version of this dish. Either one is a hearty and relatively inexpensive meal. Since the two share a lot of ingredients, consider making both–they store and reheat well. ?

I’ve enjoyed a lot of chicken noodle soups, but chicken rice soup is a different experience.

Simply Delicious has a lot of different kinds of recipes–intricate & laborious French-inspired cuisine as well as simple, weeknight-friendly fare. 3-15: Quick Mexican Soup is obviously (given the name) one of the latter types. Of course, I’ve yet to find a recipe that I don’t make some sort of tweak/edit to, and this recipe will be no different. ?

Most Simply Delicious recipes that claim to be Mexican tend to be more “Tex-Mex” than authentically Mexican. I grew up in Los Angeles–real Mexican food is a BIG part of life there. I’m not saying I’m anywhere close to an expert on the subject, but I feel like I’ve got some sense of the cuisine. Simply Delicious has an idea of where they were going with this soup–I’m just going to help it along a bit. ??

2-13: Waldorf Salad is a short and easy recipe to make. This recipe is still popular despite its age–the maître d’hôtel (not the chef) of the Waldorf Astoria Hotel created this namesake salad in 1896. Jamie suggested that I watch the episode of Fawlty Towers called “Waldorf Salad” which originally aired in 1979. This episode features many jokes about the titular salad.

“Well I think we ran out of Waldorfs.” Most kitchens would have these ingredients on hand, so this joke got the biggest laugh of the episode. ????

11-7: Grilled Red Snapper

Although I thoroughly enjoy eating fish, I don’t have a ton of experience in cooking fish. My father used to grill large-mouth bass that we caught on our summer fishing trips. This recipe, 11-7: Grilled Red Snapper definitely took me back to those times. ?

The recipe calls for Red Snapper, but I used the same technique with some Pacific Rockfish that we had on hand.

4-7: Mixed Vegetable Bake is yet another boring vegetable dish. ? ? ? There wasn’t an emoji for the vegetables used in this dish, but it was such a bland dish that even the text needs a little excitement with some added emojis! ?

This onion is about the most flavorful part of this combination behind the cheese. The vegetables add a lot of color, but not a lot of flavor.
