3-15: Quick Mexican Soup

Simply Delicious has a lot of different kinds of recipes–intricate & laborious French-inspired cuisine as well as simple, weeknight-friendly fare. 3-15: Quick Mexican Soup is obviously (given the name) one of the latter types. Of course, I’ve yet to find a recipe that I don’t make some sort of tweak/edit to, and this recipe will be no different. 🌶

Most Simply Delicious recipes that claim to be Mexican tend to be more “Tex-Mex” than authentically Mexican. I grew up in Los Angeles–real Mexican food is a BIG part of life there. I’m not saying I’m anywhere close to an expert on the subject, but I feel like I’ve got some sense of the cuisine. Simply Delicious has an idea of where they were going with this soup–I’m just going to help it along a bit. 🇲🇽

12-27: Chicken Broccoli Lasagna

Here’s something a bit different…and I’m not talking about the recipe. In fact, 12-27: Chicken Broccoli Lasagna itself is pretty boring. But here’s what’s interesting: I made this recipe at work, for work. This one will be a bit of a glance into what I do all day–my other kitchen, if you will.

I usually use ground turkey for ground meat recipes (there’s a few kids with special dietary preferences) and I’ve made lasagna before for work, so this one seemed like a perfect recipe to try to scale up for the amount I need for a daily meal. “Healthy” is what parents are looking for these days when it comes to school lunches–another way this recipe is a good fit. 🍴

EDIT: Full disclosure–this was written in 2016, and I now have a career in a completely non-culinary related field. However, this still serves as a fun reminder of a previous “life”. Enjoy!

I never expected to find a recipe for filled tacos in the Simply Delicious cookbooks. 9-6: Filled Tacos are an easy and filling dinner. The prep is the longest part. 🌮

I bought a box of prepared taco shells at the store. Different from the kind shown in the photos provided by Simply Delicious, but they got the job done. 🇲🇽

9-18: Stuffed Onions

9-18: Stuffed Onions

Never before did I think, “Boy, I should stuff some onions and eat them.” 9-18: Stuffed Onions were not the easiest dish to prepare and I don’t think I would ever choose to prepare it again.

This dish did taste exactly like meat loaf. It is a lot easier to make a meat loaf than to stuff onions, so next time, I’ll get the loaf pan out and chop the onions up.

13-7: Falafel

I do enjoy getting falafel when I go out to a Middle-Eastern restaurant. It’s much easier to cook them when you have a deep fryer. In the past, I have pan-fried some falafel, but it tastes the best when it is crispy and fried. Since we happened to be borrowing a deep-fryer, I made 13-7: Falafel.

I didn’t have any pita on hand, so I served the balls with a spicy dipping sauce instead of in the traditional pita pocket.

Here’s yet another boneless/skinless chicken breast recipe born of the health-conscious 1980s. We ate a LOT of chicken breast when I was growing up, so I’m surprised my mom never busted 6-43: Cheesy Chicken Cutlets out for yet another version.

I’m sorry, but it’s ALWAYS seemed just a bit morbid to dip chicken in egg. I realize it’s often a big part of one of my favorite things (fried chicken), but it still always nags.  I’ll leave it there–you do the math if you want to. 🐣

1-4: Ham and Cheese Sandwich

Hope you’ve been enjoying my husband/co-writer Adam’s posts–he’s having fun writing them. I’m a bit behind on my own posting, so this is one I “cooked” a while ago. 1-4: Ham and Cheese Sandwich is exactly what it sounds like, hence the quotations around “cooked”–it’s basically a grilled cheese with ham in it.

As in 2-24: Parisian-Mushroom Salad, this is a French recipe somewhat simplified–the running theme throughout much of Simply Delicious. The croque monsieur is indeed a well-known French recipe,  and lots of different takes on it exist out there.

13-11: Vegetarian Pizza

Just like the Teenage Mutant Ninja Turtles, I appreciate a good slice of pizza. 🍕 I wouldn’t normally order a vegetarian pizza. Does the Meat Lovers’ special come with 4 or 5 different meats on it?

I haven’t made pizza dough before. I briefly made bread when we scored a bread machine from a thrift store. After using the bread machine 2 or 3 times, I got to see why all of those bread machines are abandoned at the thrift store. Either my process was not good or the machine stopped working correctly after about 2 loaves of bread.
