Green sauce can mean a lot of different things (pesto, chimichurri, etc.), but for 12-41: Spaghetti with Green Sauce, it features leek tops. Because this recipe is so light, I made this dish for a quick lunch during the week.

The sauce in the photo doesn’t look as green as a pesto, but it definitely is green.

12-26: Pasta with Creamy Shrimp

Here’s a short one that was a solo dish for me (those cream ones always end up being a solo affair) – 12-26: Pasta with Creamy Shrimp. I envisioned it being more like an Alfredo sauce and less like herb-filled whipped cream with shrimp in it, but unfortunately the latter is what I got.

The description on this one is deceiving–it’s honest, yet vague. There is cream, shrimp, and horseradish–and it is easy to prepare. However, the “mouthwatering” and “delicious” descriptors were noticeably maladapt for me. ?

3-20: Italian Tomato Soup

It’s been a while since I’ve covered something out of Group 03: Soups on here–the last one was 3-14: Creamy Corn Chowder back in January. 3-20: Italian Tomato Soup is pretty simple when it comes to ingredients…and flavor. I ended up inadvertently turning my batch into what was essentially Spaghetti-Os, but even that wasn’t terrible. 

This soup is pretty basic–Simply Delicious has you add a bit of cream to make it more of a bisque-type tomato soup. If it’s not tomato season, no worries–you can make this with canned tomatoes too. ?

12-9: Pasta with Salmon and Basil

Another recipe attempt born of Costco sale inspiration and brought down by too much time between buying stuff and using it up. I did my best with 12-9: Pasta with Salmon and Basil, but I probably didn’t do it justice.

This was the only recipe in Simply Delicious that I could find that used salmon filets, not steaks. I somehow had it in my head that there were several recipes that used salmon, and so was disappointed to find that this was the only one that I was going to knock out, despite now having a few pounds of salmon.

12-13: Tortellini in Creamy Sauce

I like tortellini. I like creamy sauce. I didn’t really like this take on those items, 12-13: Tortellini in Creamy Sauce.

This creamy sauce needed a LOT of help in the flavor and texture department, and that shouldn’t be the case for the biggest component of the dish. I did use cheese tortellini instead of meat ones, but even then, it was the sauce that needed the most help.

12-8: Penne with Broccoli

As you’ve probably figured out, I don’t always write these immediately after I’ve cooked the dish. I usually remember a lot about them though, and I make a lot of mental notes as I go, especially now that I’ve done 80+ of these at this point.

I don’t remember a damned thing about 12-8: Penne with Broccoli. I’m pretty sure the only thing I remember was that it was pretty unmemorable.

My guess is it’s one of those one-pan-skillet-easy-weeknight-dinner kind of things that gets you to eat vegetables by covering them in cheese and noodles. Not that that’s bad, but it’s nothing new.

12-4: Pasta with Mushrooms

There’s been way too many cookies, both online and IRL. 12-4: Pasta with Mushrooms is a relatively healthier and easy dinner option to help ease you into post-holiday life (or just an idea for dinner tonight).

I don’t know about you, but these kind of meals with a bit of protein (chicken, fish, etc.) is pretty much our go-to for dinner these days. Maybe I’ve been cooking in schools too long already–my mind instantly goes to two veg-fruit/one protein/one grain for meal planning. I suppose there are worse habits.

12-11: Italian Macaroni and Cheese

Before you make up your mind on 12-11: Italian Macaroni & Cheese, I must let you know that it is not what you are expecting. If you are envisioning just another creamy cheesy béchamel-based sauce, this is NOT that.

This has ham in it and NO cheese in the sauce. All the cheese is on top. The noodles are suspended in a cream and egg base similar to a quiche filling. Jump behind the cut and see what this wacky mac & cheese is all about.

12-7: Fettuccini with Creamy Chicken

Here’s a recipe I’ve actually made before–it’s been a while since we’ve seen one of those. When I was about 8 or 9, my mom decided that she, my dad, and I were going to take turns making dinner each week. One of the recipes I actually planned for and made (before this grand plan inevitably fell apart) was this one: 12-7: Fettuccini with Creamy Chicken.

I probably was drawn to this one because my favorite meal as a kid was fettuccini Alfredo, and this one seems relatively similar (to an 9-year old). I also remember being fascinated with the fact that I got to use alcohol in something.

12-1: Lasagna

12-1: Lasagna

You’ll be hard-pressed to find someone who hasn’t had lasagna before. It’s not very difficult to make, but often very time-consuming. The first entry in the Pasta & Rice section is the old standby: 12-1: Lasagna. 

This version is different than what I’m used to making: it uses a cheese sauce (similar to a béchamel) in place of a ricotta/egg mixture. It was good, but I think I’d choose the ricotta/egg mixture in terms of what I think of when I think of “lasagna”.
