17-22: Bread Loaves with Creamy Filling

One of the last few from the “in-the-queue-way-too-long” batch, here’s 17-22: Bread Loaves with Creamy Filling. I’ve been putting this recipe off for a while–I never seemed to have or remembered to buy cottage cheese to make it. Yes, in another 1980s-lowfat-health-craze-inspired moment, Simply Delicious chooses to sacrifice flavor for “health benefits”, this time by stuffing whole wheat bread with herb-flavored cottage cheese.

See? “Healthy” is right there in the description. Now, 30+ years later, we’ve determined that fats are probably better for you than we thought back then, and carbs/sugar are probably a lot worse for you. Remember, when they make things “low-fat”, they usually have to jack up the sugar to make it somewhat edible. Not really a great strategy for weight loss, as my parents’ yo-yo dieting throughout the 80s, 90s, and beyond can attest to.

8-22: Beef Tenderloin with Whole Garlic

Oooh-la-la! What a fancy recipe 8-22: Beef Tenderloin with Whole Garlic is!. I have never attempted a dish like this before, but I approached it with confidence because I’ve watched Jamie make both a spiced butter and oven roasted garlic. She makes it look easy, but making this dish was not as difficult as I thought it would be. I don’t have plates with fancy fluted edges and I was out of red wine to serve with my dish, but I served it as best I could.

This dish is definitely gourmet. With spiced butter and roasted garlic, this dish contains a lot more elements than my usual go-to dishes.

Consider 20-15: Vary the Butter Sauces to be the advanced version of 20-13: Béarnaise and Hollandaise Sauces. There’s probably something that bridges the two better (whatever 20-14 is, but I don’t have that card in my collection), so 5-4: Eggs Benedict will have to do. This set of recipes is part of the Cooking School, the back section of Simply Delicious that provides instructions in basic techniques, ingredients, and recipes that any skilled cook should be familiar with.

20-15 Vary the Butter Sauces

Like I said in 20-13: Béarnaise and Hollandaise Sauces, Hollandaise and its variations comprise one  of the five mother sauces, a big part of French cuisine. Mastering it (and the others) is one of the marks of an accomplished and talented chef. I’ve always appreciated a well-made butter sauce, and these variations are intriguing–I’d be interested in eventually trying each one out.

This recipe, 20-13: Béarnaise and Hollandaise Sauces covers the basics of butter sauces, which you can expand upon with 20-15: Vary the Butter Sauces.

1-20: Prosciutto Appetizers

There’s not a lot to 1-20: Prosciutto Appetizers, but think of them as a fancier version of the classic appetizer roll-ups that feature some sort of cold cut wrapped around some sort of cream cheese. I originally intended to make these to bring with when we attended a fancy picnic-type event last year, but ran out of time before the day arrived.

Since I’m the only one who can eat these anyway, I ended up making them as a snack for myself when Adam was out of town a few weeks ago. I love Prosciutto ham, blue cheese, AND cream cheese, so these were snacks I was quite looking forward to.

7-23: Pork Chops with Tarragon

Pan frying pork chops is not the easiest method for cooking pork chops. It is really easy to over cook pork chops that way, but 7-23: Pork Chops with Tarragon came out “just right”.

These pork chops are pan fried and the sauce is added to the pan, drippings and all at the end. Cooking the sauce and meat together creates a flavorful sauce.

There was apparently a week in April 1992 (can’t say that without thinking of this) when my mom was on a tear through this book. 7-14: Easy-to-Make Pork Casserole is from two days earlier, and there’s a few more coming up from that same time period.  6-17: Chicken Breast with Cheesy Filling seems like something my mom would have been all about–she loves chicken breasts and blue cheese.

Stuffed chicken breasts aren’t new territory for Simply Delicious6-4: Easy Stuffed Chicken Breasts and 6-25: Salmon-Filled Chicken Breasts are two variations on the concept that I’ve already covered.

6-25: Salmon-Filled Chicken Breasts

I’ve been saving some lox in the freezer from a past brunch for this recipe, 6-25: Salmon-Filled Chicken Breasts. There’s not a lot of salmon recipes in Simply Delicious (despite salmon’s popularity in the 1980s & 90s), and this may be one of the only smoked salmon ones that I have in my collection for this book.

Definitely not the first time Simply Delicious has given a recipe for stuffed chicken breasts–see 6-4: Easy Stuffed Chicken Breasts for another take on the same idea. However, if you like smoked salmon like I do, you may have some extra laying around–here’s a use for it. ?

1-4: Ham and Cheese Sandwich

1-4: Ham and Cheese Sandwich

Hope you’ve been enjoying my husband/co-writer Adam’s posts–he’s having fun writing them. I’m a bit behind on my own posting, so this is one I “cooked” a while ago. 1-4: Ham and Cheese Sandwich is exactly what it sounds like, hence the quotations around “cooked”–it’s basically a grilled cheese with ham in it.

As in 2-24: Parisian-Mushroom Salad, this is a French recipe somewhat simplified–the running theme throughout much of Simply Delicious. The croque monsieur is indeed a well-known French recipe,  and lots of different takes on it exist out there.
