8-32: Indian Beef Casserole is an affront to Indian cooking worldwide. It is a dish that barely any Indian people would actually eat because it contains beef! ?

During my brief trip to India, I actually ate some beef served by the hotel which was spiced similar to this dish. This hotel served beef because it hosted a lot of travelers from USA and Europe who usually eat beef. Indian culture perceives the cow as sacred and a significant portion of the population observes a vegetarian diet. ??

9-2: Mexican Fiesta

9-2: Mexican Fiesta sounds exciting, but it’s really just poorly layered nachos. I know that they were trying to make it seem like a casserole, but all the good stuff that goes in tacos/nachos is basically layered in a pan and covered with a layer of chips on top. I think you’re supposed to eat it like a dip? ?

I like the touch of the Corona with a lime in the background of their picture, like all of a sudden that makes it a party. I can’t think of too many decent Mexican places that would serve something like this, but if you want something festive yet inoffensive for a party or a lengthy Netflix session, I suppose this recipe could get the job done. ?

Beef Stew – Another classic recipe that Simply Delicious cannot get quite right. This dish tastes delicious, but isn’t quite what I would consider a beef stew. It’s almost like a simple Boeuf Bourguignon.

I used a slow cooker instead of the oven for cooking this dish. I apologize that some of the photos are blurry from trying to shoot down into that very slow cooker. Without any other photos in focus, I chose to display some of them in this post just for posterity.

7-14: Easy-to-Make Pork Casserole

I think Simply Delicious was aimed at the working-mom demographic primarily–a lot of the recipes focus on easy weeknight meals just as much as the fancy dinner party options. 7-14: Easy-to-Make Pork Casserole is a casserole in the sense of a casserole being a bunch of random stuff thrown together in a vessel and then heated.

Casseroles are typically defined as the traditional green bean or tuna types that we (by that I mean mostly Americans) associate with that word. This dish is a loose mixing of vegetables and pork cubes, and is honestly much more reminiscent of 7-55: Sunday Pork Stew than of “casserole”. My mom seemed to like it though, when she made it back in April of 1992.

As I mentioned in 9-12: Shepherd’s Pie, I had a LOT of potatoes to get rid of after buying too many at Costco. So here’s another potato recipe for you: 6-30: Scottish Chicken Casserole.

Offhand, I have no idea why it’s “Scottish”, other than it seems similar to a lot of food you get in the UK. A cursory Google search turned up this recipe, which seems kind of like this one. This other recipe (from the same search) gives a bit more history, linking it to a classic French (and Scottish) casserole-type dish.
