12-15: Pasta with Salami

Pasta with a thin sauce didn’t seem super appropriate for dinner, so I made 12-15: Pasta with Salami and dished it out for lunch as part of a meal prep. While there are a few differences between the recipe card photo and my final product photo, my creation was similar in spirit to the beautifully shot photo below. The place settings are so retro–such a great scene they set.

The exquisite setup showcases the raw ingredients along with the wonderful cutlery and plating of the dish. How magnificent!

The example photo looks so elegant. The blue rimmed wine glass is excellent, I wish I had a set of those. The description is not hyperbolic when it says this is a completely new version of lasagna. It’s barely lasagna.

13-8: Vegetarian Calzone

Much like Ben Wyatt, a late-addition character from NBC’s Parks and Recreation, I have enjoyed my fair share of calzones. Hawaiian calzones are one of my favorite types, pineapple and Canadian bacon can’t be beat! However, when wanting to eat in a health conscious manner, 13-8: Vegetarian Calzone is a great meat-free alternative.

Preparing this dish was super easy. A lot of time can be saved by using ready-bought puff pastry.

Editor’s note: This was a dish I made as part of a big family dinner I cooked with a family friend when I was 13–my step-grandmother is vegetarian and we made this so she’d have something to eat. My mom made her a baked potato for Thanksgiving once, complete with a toothpick-and-construction paper turkey head, wings, and tail that I painstakingly spent the day crafting. She did not appreciate the turkey-potato (too closely resembled an animal for her…go figure), but she did like this calzone.

9-16: Individual Salami Pizzas

Simply Delicious has several takes on pizza–we’ve covered quite a few already including 13-11: Vegetarian Pizza, 1-9: Four Seasons Pizza, and 5-31: Oven Pizza Pancake. There’s even 11-4: Calzone with Seafood if you like your pizza folded in half with toppings on the inside. 9-16: Individual Salami Pizzas is probably one of the more “traditional” pizza recipes so far.

It’s recommended to make this for something like a kid’s party, since it’s pretty tough to find a kid who will say no to pizza. I was a teacher for several years, ran a meal program for a school for a year or two, and I’m here to tell you that pizza (in whatever shape/form/capacity) was always a crowd pleaser for young and old.

I’ve made a lot of bread during the 3.5 years I’ve been working on this project (both for the project and outside of it), and I hear a lot of the same remarks whenever I talk about making bread: “Oh, that seems hard”, or “It’s too much work to make bread”. I used to feel the same way, and shied away from yeast recipes for a long time out of a fear of failure. In cooking (like most things in life), you have to be ready to embrace failure and learn from it–otherwise, you’ll never get past heating up Hot Pockets in the microwave.

Simply Delicious even notes in their recipe blurb that bread making is perceived as hard. It’s maybe not the easiest thing in the world, but you’ll make a lot of friends fast if you can make them fresh bread. 18-1: Basic Yeast Dough I is the first in a three-part series on bread making, where you’ll learn some tips and tricks for improving your bread baking, as well as a few basic recipes that you can use.

9-29: Ground Meat Kebabs

The Ground Meat and Sausage category is mainly 2 types of dishes: ground meat patties and ground meat kebabs. 9-29: Ground Meat Kebabs is one of the kebab variety. I made this recipe at the same time as 9-19: Meatballs on Skewers because they called for almost identical ingredients.

Grilling outside is much more satisfying than using a grill pan in my apartment, but I currently don’t have a lot of space for grilling.

Editor’s note: Putting on my ex-history teacher hat for a second–note that Simply Delicious claims this dish is from the vineyards of Yugoslavia, which hasn’t been a country since the late 80s/early 90s, around the time the Soviet Union collapsed. These remind me a lot of lule kabobs, which were one of my favorites when we lived in a heavily-Armenian area in Los Angeles (the apartment with the blue tiles and yellow walls from the beginning of this project). These are NOWHERE near as good as those ones, but I suppose they could pass in a pinch.

9-19: Meatballs on Skewers

Gyro is probably my favorite preparation method of ground meat, so when I saw this recipe, I got very excited. This recipe, 9-19: Meatballs on Skewers is basically the same recipe as gyro, just served differently. However, I wish I had just bought a container of tzatziki at the store instead of making the yogurt sauce.

The rabbit handle piece on the end of the skewer in the example photo is simply incredible. I’ve never seen a set of skewers quite like that. It looks like the other skewers have other animal handles, I think I see a cat and a chicken on the other skewers that are slightly obscured by the meatballs. The serving dish is very neat, I’d like to add one to my collection.

2-23: Grilled Chicken Salad

Who doesn’t love a simple salad? The editors of Simply Delicious knocked one out of the park with 2-23: Grilled Chicken Salad. Combining fresh vegetables with nicely cooked chicken is an easy method for creating a killer salad. My final product didn’t look much like the photo below, but the flavor is totally on point.

I love the bowl of strawberries and fresh baked biscuits behind the salad in the product photo.

17-47: Italian Fruit Bread

Get ready for another big batch of baked goods–it’s time for this year’s adventure (XMAS 16) into holiday baking (aka everyone’s presents for Christmas this year). Last year I made 6 Simply Delicious recipes as gifts, and this year came out to a total of 7. ? I’m going to attempt to cover them in the order they were made, and the first recipe of the batch was 17-47: Italian Fruit Bread. ??

This recipe seems similar to a panettone, although not as sweet or flaky and shaped differently. Despite the variations, I still thought it made a nice Christmas gift, especially only just including a few slices in each gift bag. ?
