15-22: Cappuccino Ice Cream

On the heels of 19-8: Coffee, Tea, & Chocolate I, I happened to recently make a somewhat-related recipe, 15-22: Cappuccino Ice Cream. I love coffee ice cream, and so does my mom. However, this recipe is NOT what you (or I, or she) would have expected by that title.

I bring my mom up also since it’s just about Mother’s Day (or might already be by the time you read this)–maybe don’t make this one for your mom though, unless she likes coffee slushies. Again, even that sounds better than this actually is.

The TIPS mention you can use ice milk for a lower fat and calorie option–I definitely remember ice milk being a thing in the 90s. Is it still around?

Ingredients. I didn’t feel like brewing coffee just for this, so we swung by a Starbucks and picked up a tall black drip coffee–smiley face on the cup courtesy of the barista. I left it in the fridge for a day (or two, or three) before I made this, so it definitely had time to chill. star

Measured out 1/2 cup of coffee for each (since I’m only making two) and put them in these bowls. Tall cups really probably would have looked better, but I was being lazy.

Whipping the heavy cream and powdered sugar.

I actually did this a few hours ahead of when I served these (the magic of editing), so I put it in a container to chill in the fridge for a few hours until we were ready. I think that actually helped keep the cream a bit more stable in the end.

Chopping up the pistachios by using my mini-food processor.

I love this thing,

Fast forward to ice cream service time. I pull out the chilled bowls (fridge, not freezer, since it was a few hours) and cream (same) along with the ice cream and chopped pistachios.

Scooped out exactly 1/4 cup of ice cream each (calories count, yo) and plopped them into the bowls–looks like I’m not winning any plating contests with this one.

Final dish, topped with a dollop (more like another plop) of whipped cream and sprinklings of cocoa powder and chopped pistachios.

They were not great in this format (the ice cream made the coffee slushy and not in a good way), but maybe it would be if you blended it all up into a shake instead?
