16-9: Raspberry Tart

Here’s a simple dessert that’s easy for a dinner, gift, or even just a snack. 16-9: Raspberry Tart is exactly what it sounds like–pie crust in a tart pan filled with raspberry preserves and topped with bits of dough. Simply Delicious uses a simple drop method for the dough topping, but I think we can do better than that. 🌟

Why did anyone think that amorphous blobs of dough were an acceptable tart topping? 🤷‍♀️

17-48: Buttery Vanilla Rolls

In my holiday baking batch from last year (XMAS 15), I included 17-67: Coconut Crescents to offer some variety to the endless types of cookies. 🍪 17-48: Buttery Vanilla Rolls were included in this year’s holiday baking (XMAS 16) for much the same reason, although I think I ended up with a better mix of items this year. 🎅🏼

I liked that these were baked in muffin cups as well–I thought that might make them easier to pack up and distribute/ship as gifts. To make them holiday-ish, I sprinkled them with a bit of red and green decorating sugar while they were cooling. 🎄

15-18: Chocolate Favorites

Cold desserts are not my area of expertise, but I gave it a shot for this recipe. ❄ 15-18: Chocolate Favorites were a hit! I really just got a kick out of saying “Chocolate Favorite” when describing these little treats. 🍫

Bite sized pastries are the best! These two layers did come out as intended, a one-two punch of chocolate flavors. This recipe did indeed make me want to rejoice. 😆

5-5: Individual Ham Quiches

I wasn’t about to go out and buy mini quiche pans just to cook 5-5: Individual Ham Quiches. Taking the alternative route, I made this dish as one, full-sized quiche.

I believe the card puts it best. At this point I’m not quite “fortunate enough to own small oven-proof quiche pans,” so a full-sized pie pan will do. If you use a foil pie pan, there is a lot less cleanup when the quiche is done, just toss the foil pan in the recycling. ♻

16-15: Tarte Tatin

I’m not going to write a long dissertation on the origins of the well-known French dessert, Tarte Tatin–I’ll let Wikipedia handle the background of it. Instead, I’m going to focus on my history with 16-15: Tarte Tatin, evidenced by my mom’s handwriting all over the front & back of the recipe card.

Since she and I already had plans to go to a local farmers’ market for this year’s Labor Day BBQ supplies and apples were plentiful, I decided to bring back an old classic for us to cook together. 🍏

Most versions of Tarte Tatin are somewhat similar–it’s a pretty basic recipe. My mom’s notes claim it’s “easy”, and she stands by it to this day. Her other notes turned out to be helpful as well–the importance of good note-taking.

Croissants are a culinary item that have been around for well…a really long time. Crescent-shaped rolls are a part of several cuisines–one example would be the kifli from Eastern Europe, versus the well-known Western European version, like 17-1: Croissants. 🌙

Wikipedia mentions that frozen pre-formed croissants are pretty readily available these days (and have been since the 1970s), so making this recipe’s truly a labor of love–it takes a good amount of effort, as noted above.

13-2: Onion Tart

It’s hard to think of things to write about something you cooked awhile ago–a moment of honesty while I get my gears turning here. 13-2: Onion Tart is a great vegetarian (with a modification or two) option that satisfies everyone for any meal of the day. It’s not super exciting (which explains my inability to think of anything particularly interesting to say about it), but it’s definitely a pretty good fallback option if you’re in need of an easy, crowd-pleasing, inoffensive, yet impressive recipe.

Simply Delicious notes that this recipe is French and that this version comes from the Alsace region of the country. I found a few other takes on that version scattered around the Internet, but give or take some bacon and Gruyère cheese, they’re all relatively similar to this one. 🍷

17-4: Cinnamon Rolls

I realize it’s now June, but here’s a recipe I made for Mother’s Day this year, at the request of my very own mother. What can I say…it takes a while to actually sit down and write these things sometimes. We were doing brunch at their house this year, and she wanted us to bring cinnamon rolls, so I solved two problems at once by making 17-4: Cinnamon Rolls.

This particular recipe doesn’t include an icing/glaze with it, but if you want one (as I knew my mom would), I used this recipe from food.com and it works just fine. Let’s be honest–the ones in their picture are probably NOT what you pictured when you thought of cinnamon rolls. Whether you’re thinking of their picture or mine, this recipe (with a few tweaks) will probably suit your needs.

16-18: Lemon Basil Tart

Here’s one I’ve wanted to make for a LONG time, but never got to. I had even intended to do a version of 16-18: Lemon Basil Tart when I worked at the restaurant and was doing tarts every week moonlighting as the pastry chef, but the day I intended to make it, we were short on lemons and basil. Now I finally have a chance, and I even have the big tart pan in which to properly make it.

I didn’t even see until now that they mention that basil is related to mint–it makes sense. In this tart, the basil functions a lot like mint, and gives the tart a “fresh” flavor that just lemon wouldn’t provide. It took me a while to get to it, but it was worth it. 🍋🌿
