5-2: Old-Fashioned Oven Pancake

Hello there, and happy June! I was on vacation (a real one!) for most of May, but I’m back now with 5-2: Old-Fashioned Oven Pancake. There’s not a lot that goes into this dish (just 4 ingredients), and it’s probably better/more commonly known as a German pancake and/or a “Dutch baby”.

So far, this is the only mention of lingonberries that I’ve seen in this whole book–I always think of them as something you only see in jam form at IKEA, but according to Wikipedia they are grown in multiple regions including North America (not just Europe/Scandinavia). They’re tough to find fresh here, but frozen seems to be widely available.

You thought I’d run out of crêpe recipes by now, didn’t you? Here’s yet another for you (#7, at the time of this posting), 5-17: Crab-Filled Crêpes. Simply Delicious has featured both sweet and savory crêpe recipes, and this one would probably be EXCELLENT for a nice brunch.

WAY, way back, when I first started this project (April 2014), crêpes were a new frontier–something I’d never done before. You can read about it in 5-24: Meat-Filled Crêpes.

Now, they’re easy. Time changes so many things.

I think 14-9: Glazed Crêpes with Pears might be my final untested crêpe recipe from Simply Delicious–but there may be others in there. I’ll even give you a quick spoiler (since this recipe is kind of boring…another spoiler) for upcoming posts–there are more recipes out there than what I had originally. I know because I found (and purchased) some in a local Goodwill.

I’ve still got quite a few posts to go before I dig into some of the *NEW* recipes (and show you the book they came in), but for now, you can read about yet another crêpe recipe after the jump. But this time, with pears! And glaze!

1-15: Chinese Spring Rolls

Simply Delicious has made numerous attempts at Chinese-American cuisine, and we can add 1-15: Chinese Spring Rolls to that list as well. There’s some interesting history behind the terms spring roll and egg roll–it goes much deeper than just what the wrapper is made of.

The terms are used interchangeably here, and seemingly in most other places as well. The biggest takeaway from the spring vs. egg roll debate is that spring rolls are originally from China, but have been Americanized along the way (while egg rolls were always American).

They tend to have a thinner wrapper than egg rolls, and are often also associated with the transparent rice paper rolls you tend to see in Vietnamese and Thai restaurants.

9-1: Spicy Beef Patties

Any excuse to pull out the electric griddle is alright with me! After all of the meatball-style recipes in the Ground Meat and Sausage section, I was ready for a patty-style recipe again and 9-1: Spicy Beef Patties did not disappoint. I’ve never thought to put pickled beets into a burger before, but after trying this recipe, I would consider it again.

I love the little skinned potatoes they served alongside the patties in the example photo. I haven’t quite learned the technique to cook those yet. Their side salad is very photogenic, but not very filling. 3 tomato slices and 1 leaf of lettuce.

9-5: Modern-Style Hamburger

Simply Delicious has provided a plethora of burger recipes for me to try, like 9-15: Peppercorn Beef Burgers and this recipe, 9-5: Modern-Style Hamburger. I like to cook these on the electric griddle because I can cook the entire batch off at once and they all cook evenly.

I tend to prefer burgers that are dinner sized. These burgers are more like sliders or a thin lunch style burger. ?

9-15: Peppercorn Beef Burgers

Hello readers, I’m Adam, your usual author’s husband, chiming in with a guest post. Jamie has these Simply Delicious recipes hung on our kitchen cabinets like a restaurant rail full of orders. There were some easy level recipes that I thought I could cook while Jamie was busy trying to finish her backlog of blog entries. 9-15: Peppercorn Beef Burgers are my first such attempt at preparing a recipe and photographing the process. I have to say that I had a lot of fun (I lit the sauce on fire!?) and you’ll see a few more guest posts from me coming up.

I’ve made more than a few burgers in my day, but the sauce on these patties did elevate the dish to a higher level.

We’ve covered the fact that burger patties are a common recipe for using ground meat–9-25: Juicy Grilled Meat Patties, 9-44: Wok-Fried Beef Patties, and 9-31: Savory Turkey Patties are just a few of the methods outlined by Simply Delicious9-24: Tangy Double Meat Patties are another variation, this time with a flavorful filling of your choice.

Snappy is such a great adjective for describing food. I don’t think anything past about 1988 has been described as such, but if you dig into the 1950s-60s era of  cookbooks (of which I have a ton), it’s all over the place.
