4-15: Scalloped Onions

“It smells like weird Mexican food in here,” Jamie said as she walked in the door. She wasn’t wrong. The example image sets a rustic farm tone with the watering can, basket of red peppers, and parmesan cheese in the background. The watering can even has onions painted on it. Awesome!

When I saw that it will need reheating before eating, I decided to make this dish in a large rectangle Pyrex. I made this recipe at half size to accommodate the baking dish. I only used two onions because Simply Delicious bases the number of onions on the smaller onions that were available when these recipes were written. Two was more than enough.

I’ve made a lot of bread during the 3.5 years I’ve been working on this project (both for the project and outside of it), and I hear a lot of the same remarks whenever I talk about making bread: “Oh, that seems hard”, or “It’s too much work to make bread”. I used to feel the same way, and shied away from yeast recipes for a long time out of a fear of failure. In cooking (like most things in life), you have to be ready to embrace failure and learn from it–otherwise, you’ll never get past heating up Hot Pockets in the microwave.

Simply Delicious even notes in their recipe blurb that bread making is perceived as hard. It’s maybe not the easiest thing in the world, but you’ll make a lot of friends fast if you can make them fresh bread. 18-1: Basic Yeast Dough I is the first in a three-part series on bread making, where you’ll learn some tips and tricks for improving your bread baking, as well as a few basic recipes that you can use.

17-18: Golfer’s Rolls

If you’re looking for something you could use for making lunches in advance, 17-18: Golfer’s Rolls could be an option. My suggestion? Use a creamier, softer cheese like they do in their picture (Simply Delicious shows Brie) or add some mayonnaise/avocado/hummus at the time of eating because these rolls can get a little dry.

Simply Delicious advocates freezing these rolls after filling them like sandwiches, and then bringing them with you somewhere (like a golf course). While my new co-workers like to play golf a lot, I only ended up bringing these to lunch at my desk. ⛳️

4-13: Fennel au Gratin

Fennel has been a challenge ever since we started receiving CSA boxes a year or two ago. I really never cooked with it before and even now, finding recipes to use with it (that I’ll eat) is difficult.

If you’ve never had fennel, it tastes like black licorice. You eat the bulb part, and usually cut off the stalks & feathery parts. I usually save those parts and put them in when I make chicken stock.

4-13 Fennel Au Gratin

We ended up with two very large fennel bulbs, and so I decided to make 4-13: Fennel au Gratin, because you can’t go wrong when you cover things in cheese.

We paired this with some English cheddar tortilla/gluten-free something-or-other chips as well as put it on top of some veggie patties–both were pretty good. It worked well as a dip–it might be too cheesy as a side dish, unless you added more fennel.
