I have never been known for my skills in preparing fish, but this recipe, 11-35: Grilled Pacific Halibut, helped me become a halibut grilling master! 🐟
Many of the times I failed at cooking fish, I did not marinate the flesh first. Skipping that step definitely makes a difference.

Back again with another Cooking School entry from the back of Simply Delicious. 18-6: Basic Pots & Pans is a featured topic discussing different types of cookware that can be used, with tips on handling, usage, & storage. Pot & pan types are controversial for some cooks, and what one person stands by may be another’s no-go. 👩🍳
In this entry, I really only plan to show you what I’ve got going in my own kitchen as of the time I wrote it, and I’ll probably pepper in some links to different pieces on cookware. I can’t claim any real authority on any of this stuff besides my own personal experience and knowledge, but I can at least maybe add one more opinion out there. 🍳
I like dishes that are easy enough to prepare on a weekday night. 6-14: Chicken Breasts with Tomato Salsa teaches you to make a simple salsa to put on top of some tasty chicken breasts. 🍗
I really enjoy dishes like this for dinner: simple and flavorful ingredients which combine to make a nutritious, Simply Delicious meal.
One of the two desserts I made for this year’s Thanksgiving (TGV 2016) was 16-52: Apple Nut Saucepan Torte (the other was 15-49: Chocolate Pudding Deluxe). I wanted something “of the season”, and this seemed like a cross between apple pie and fruitcake.
This was the second dish I made, starting off the Wednesday 11/23 portion of my holiday cooking marathon. Since this cake holds well at room temperature, I planned to just slightly underbake it, and then finish it off for 5-10 minutes in a preheated oven to warm it up for dessert on the day of the holiday.
If I hadn’t made this for Thanksgiving, I think it’d make a great gift (mailed or delivered in person) or potluck dish, especially for an office or somewhere where it would sit for a while. Even though Thanksgiving is over for the year, it’s totally still the season for a cake like this one.
Other dishes I made on this night (Wed. 11/23): the dressing for 1-10: Seafood Louisiana Cocktail, cranberry sauce, 15-49: Chocolate Pudding Deluxe, and a roasted garlic & herb butter to serve with 17-5: Hot Seedy Rolls.
Although I thoroughly enjoy eating fish, I don’t have a ton of experience in cooking fish. My father used to grill large-mouth bass that we caught on our summer fishing trips. This recipe, 11-7: Grilled Red Snapper definitely took me back to those times. 🎣
The recipe calls for Red Snapper, but I used the same technique with some Pacific Rockfish that we had on hand.
I definitely did NOT eat a lot of lamb or veal growing up, but cooking through these recipes has given me the opportunity to try out some different dishes these days. On a recent Costco trip we found lamb chops on sale, so I decided to use them for 10-17: Lamb Chops with Mozzarella.
This seems like a strange trend that Simply Delicious is perpetuating–7-2: Pork Chops with Tomatoes is essentially the same idea except with pork, Cheddar cheese, tomatoes, and green beans. Take meat, stack a slice of cheese and random fridge/pantry items on it, call it a recipe. ¯_(ツ)_/¯
Here’s a first for me: I’ve never attempted to break down a duck before this recipe, 6-11: Chinese Duck. I’ve cooked with duck a handful of times, but this is definitely the most involved with it that I’ve ever gotten. There’s one more duck recipe in this book, so expect a return sometime in the future.
I found myself with a duck after my husband took a trip past a local butcher a few weeks ago, so I decided to take a stab at one of the two recipes in the book. I assumed this would be similar to the Chinese dish Peking duck, and in true Simply Delicious style, it doesn’t quite come as close as recipes today can get you.
Here’s one I’ve been meaning to make for a while. As I mentioned in 9-12: Shepherd’s Pie and 6-30: Scottish Chicken Casserole, I had too many potatoes after a Costco shopping trip, so I’ve been burning off potato recipes.
Potato pancakes have been done before, along with a zucchini version as well. So what’s different about this one? Guess you’ll have to keep reading to find out. 😉
This is another backlogged one from November 2015 like 14-12: Bread Pudding with Rum Sauce. You’ve probably already seen the results of 5-11: Country Omelette, but I maintain that I CAN make a good omelette–this was just not one of them.
Country omelettes are a thing, usually referred to country French omelettes. As is my problem a lot of times, I had pan difficulties which led to this one not turning out well. Maybe it’s time to do some pan shopping.
Finally–something that’s not chicken. The first pork recipe we’ll cover here is 7-26: Maple-Glazed Pork Chops.🍁
My mom was NOT a pork eater and we grew up quasi-Jewish, so there wasn’t a lot of pork being cooked in my childhood, spare the occasional ham steak or rack of ribs here and there at my dad’s request.
The key here is to make sure you use REAL maple syrup, not table syrup. Big difference.
